Roasted Tomato Soup

Roasted tomato, garlic and herb soup


Ingredients:


Roma Tomato - slice in 1/2 - 3lbs or 1.2 kg

Cherry tomatoes - sliced in 1/2 - 150g

Red pepper - Sliced - 1

Spanish Onion - rough chop - 400g

Celery - rough chop - 100g

Garlic bulbs - 50g

Olive Oil - 1/4 cup

Thyme - 8 sprigs - stem removed

Salt - 2 1/2 teaspoon

Crumbed pepper - 1 3/4 teaspoon


Place all ingredients on a sheet pan

Roast @ 400F for 40 minutes


Add all ingredients into a pot on the stove and add the following ingredients:


Tomato paste - 1 Can

Bay leaves - 2

Parmesan rind - 1"x2"

Roasted Garlic - 1/4 Cup


Let the pot simmer for 30 minutes, cool and..... Enjoy!


*Pro Tip: Add basil, grated parmesan cheese and salt and pepper to taste to optimal flavor!
